How would things change if everyone suddenly stopped eating meat?

Aside from the fact that we'd have millions of cattle wandering around our fields and streets ...? Hah! Actually, the environmental impact of eating red meat, especially, is terrible. Cows consume 12 time more than human beings and, in fact, a huge part deforestation takes place for cultivating grain (to feed cows). In terms of environmental sustainability it would be an enormous boon. Of course, an entire industry would die, but Americans would likelier be a lot healthier (even if a little meat is fine, the vast majority of Americans eat way too much). Assuming we reach the 10 billion mark, sooner or later we are going to have to cut back.
